I’m Rosemary, a Registered Dietitian, and now part of Fat2fitmommy.com. These days, I along with Connie, founder of Fat2fitmommy.com are also offering consulting services.

As we worked together, Connie and I realized that most people don’t need more nutrition information — they need help applying it to their own lives. That’s where our consulting comes in.

There’s a real difference between reading a list of “healthy” foods and actually building a routine around your schedule, preferences, budget, family, and cooking ability. A meal plan that looks perfect on paper doesn’t help much if you don’t enjoy the food, can’t find the ingredients, or can’t see yourself sticking with it past day three.

Our goal is to make nutrition and meal planning personal, practical, and realistic. Losing weight shouldn’t require bland food, complicated rules, or constant guesswork.

I focus on helping people turn broad nutrition goals into personalized, practical meal plans — because everyone has a different lifestyle, schedule, and relationship with cooking. Connie brings her experience with recipe development, nutrition research, and the everyday challenge of making healthier food work in a busy household. After You Reach Your Goal

Maintenance can be just as hard as losing the weight in the first place — old habits are familiar, life gets busy, and portions creep back up. Maintenance shouldn’t feel like a permanent punishment. For many people, a Mediterranean-style approach — vegetables, fruits, legumes, whole grains, nuts, olive oil, minimally processed foods — offers a flexible framework for the long run. Food isn’t medicine and isn’t a substitute for medical care, but it’s one everyday factor that affects how we feel and function.

How I Helped Build the Slim and Trim Meals Cookbook

Connie brought years of recipe development and research; my job was to look at the collection through the lens of meal structure, usability, and how people actually put dietary advice into practice. We asked: Is there enough variety? Are the recipes realistic for busy schedules? Do the ingredient lists stay approachable? My meal-planning background shaped how we thought about flexibility and variety — because no two people eat exactly alike. That meant covering multiple dietary approaches (vegan, Mediterranean, keto), prioritizing everyday practicality, and building in enough variety across breakfast, lunch, dinner, and snacks that the book gets used again and again instead of abandoned after a week.

Through consulting, we help you move from general advice to something individualized — personalized meal planning, weight-management support, recipe guidance, portion and macro guidance, dietary-preference planning (Mediterranean, vegan, vegetarian, lower-carb), busy-family meal planning, grocery planning, healthy substitutions, long-term maintenance planning, and nutrition education that explains the “why,” not just the rules.

We Start With You

Your food preferences, schedule, cooking skills, budget, and family all matter. So we start by understanding what you currently eat, what you enjoy and dislike, your daily routine, how much time you realistically have to cook, your household situation, your goals, and where you tend to fall off track. From there, we build a realistic strategy instead of asking you to overhaul your life overnight.

My Role

As the RD, I take broad nutrition principles and translate them into practical food choices and meal structures for a specific person: What should this person actually eat? How much variety do they need? What would make the plan easier to follow?

Connie’s Role

Connie brings years of nutrition research, recipe experimentation, and real-world experience trying to make healthy eating work in ordinary life. A theoretically perfect plan isn’t enough — people need food that tastes good, ingredients they can find, and enough flexibility that one hard day doesn’t derail everything.

What Consulting Doesn’t Mean

We don’t promise miracle results, prescribe one “perfect” diet, or pretend nutrition solves every health problem. Our role is to help you make better-informed food and meal-planning decisions — anything requiring medical diagnosis or treatment belongs with the right healthcare professional.
